Sheringham, who Kane admitted to admiring as a youngster, bagged 97 league goals in 236 games for Spurs.
Robbie Keane has claimed the last podium spot, with 91 goals in 238 outings for Tottenham.
The in-form striker is now just two goals away from becoming the first player to ever score 100 Premier League goals for the north London side.
Kane's brace against the Toffees makes him only the third player to score at least 20 goals in four consecutive seasons, after Thierry Henry and Alan Shearer.
The Englishman is the Premier League's top scorer, with 20 goals and one assist after 23 top flight matches.
And Mauricio Pochettino believes that Kane will overtake Jimmy Greaves as the clubs all-time leading goalscorer.

At the tender age of 24, the striker is one the Europe's most coveted stars after a sublime spell in the Premier League.
But club chairman Daniel Levy has insisted that there is no chance of the England ace leaving White Hart Lane anytime soon.
Everton went on to suffer a 4-0 defeat to Spurs, with Son Heung-min and Christian Eriksen also finding the net.
But Pochettino's side, who are fifth in the table, are 18 points behind Premier League leaders Manchester City.
